"Lemon and Herb New Potatoes

•2 finely minced cloves of garlic
•1 tsp. freshly cracked sea salt
•cracked pepper to taste
•1 lemon rind, finely grated plus the juice
•1 ½ tsp. mustard
•4 T. olive oil
•2 T. chopped fresh chives
•1 tsp. chopped fresh parsley
•1 or 2 finely chopped green onions
On a baking sheet rubbed with olive oil, roast 2 pounds new potatoes or
fingerlings with thick slices of onion until tender.
Meanwhile prepare ingredients. Whisk in the order given allowing extra
whisking time to the olive oil addition. Mix the green onions in just before
pouring over hot potatoes. Toss into potatoes gently and serve warm."

Here come Santa Cox 2009

We can't believe it's Christmas time again! Our family has truly been blessed since its beginning eight years ago. I can't hardly believe that we have been married for 8 years! It seems like yesterday. I haven't gotten any older, but somehow our girls seem to get older. We hope that you are all as happy as we are!

We have been in our home for 2 years now. We love it! We still have

A few things to do – sidewalks, pavement, etc but we are so grateful to have a roof over our heads!

Job change: For the past 5 years we had managed a hay brokerage business, but felt impressed that we needed to make a change and begin our own hay business. While a hard decision with lots of hours spent on our knees before we proceeded with it, we really feel that it has been a good move for our family. We feel blessed to be able to work with such good people in the agriculture field. We work with good farmers, dairymen, and cattlemen. Our business name is DHC Agriculture, Inc. I somehow find the time to keep the books for our business and really enjoy that. There is something therapeutic about accounting - All the little numbers matching up. I know it sounds completely CRAZY but I do enjoy it.

Cows. Our little cow herd is slowly growing. I guess in reality we are raising
kids with cows. Herding and checking our cows is really something we enjoy doing.


 

Dustin is busy as usual. He is a wonderful husband and father. He is so cute with our girls! I appreciate so much his hard work to provide for our family and the hard work he puts into his church calling. He has been the Elders Quorum President for the past 7 years and really likes it. This past November we attended the Utah Farm Bureau Convention where both Dustin & I competed in the Young Farmer & Rancher Discussion Meet. We both managed to make it to the final 4, but Dustin won out in the end. He came home with a new 4 wheeler, $500 cash, etc and a trip to compete nationally in January at Seattle WA for a new Dodge truck. Wish him luck with that! Dustin & I were also elected to be the new State chairmen for the Young Farmers & Ranchers in Utah. We are excited to fulfill that assignment. Dustin loves the policy and fighting for the rights and liberties of farmers, ranchers, and American's. This past summer he conned us into going and riding to capitol hill in the "Take Utah Back" rally. I have to admit it was quite the sight to see the girls and Dustin riding amidst all the skyscrapers. A highlight for him was winning the JCD Ranch Rodeo and coming home with a shiny new buckle and shiny new goose egg on the chin.

Harmony: I am busy as usual. With every new season there are new projects. This year, with the help of sisters, friends, and family we managed to put up more than 600 jars of various preserves. Not to mention the 100+ jugs of apple cider.

Last November we put in for the Utah Excellence in Agriculture award and won. We traveled to San Antonio, TX to compete nationally for a new dodge truck. We did make the top 10. Wish we could drop that zero = ). I really enjoy our 4 little cowgirls. They are a pure joy; all different and amazing in their own ways. I play the piano in the primary for church. I do enjoy that. On our Christmas cards this year I found a coupon for 25% off, 25 free cards, & free shipping, but it had to be done by midnight. So as you noticed in my rush I mixed up the quote, "Sheppards still watch, Wise men still seek him." But I did make the midnight deadline saving us all kinds of $$$. ; 0 )


 

Esther – 7yrs: Still running as fast as ever. I will never forget the day Dustin, I & Esther were in the fields below town. Esther was 3 at the time. She was riding my big sorrel horse Sue.

She said she wanted to race us back to the barn, she on Sue and us in the truck. Not even waiting for an answer she took off. Dustin & I watched her fly through that field, and I felt my stomach drop. Sue had run away with Esther! Just then we saw her little legs go out. She was kicking! Whip n' Spur! I couldn't believe it! And she hasn't slowed down since.

Ruth - 5 yrs: Is our beautiful blond haired, blue eyed lady. She is all girl. For her birthday she asked for a crown, "A real princess crown." She absolutely loves going to Aunt Heather's preschool. A highlight for her (and us all) was the 10 day cattle drive. Each fall we help my Dad drive his 850 momma cows south for the winter. We have a wonderful time together as a family and with our new friends. Ten people from around the globe come and go with us. We have made some really great friends on cattle drives. Just after the cattle drive my Sue horse, a wedding present from Dustin, broke her leg and had to be put down. We are so sad to see her go. She was so sweet we could put any of our kids on her and yet when Dustin or I had to get down to business she was all there. It will be a long time replacing such a horse.

Rachel
– 3 yrs. I am not sure what to say about our little Rachel except that she is a red head. Enough said! She makes us laugh every day. She is
Daddy's girl all the way and has been since she was about 18 months old. She goes on all the long hay trips with him, California, Texas, or Montana, you name it if Dad is going, Our "Lou Lou" is on board! She is also our "reasoning" child. She is all about compromise, "Mom I will do it if you will do
.." She can usually talk a babysitter into whatever is on her mind.

Emma – 14 months: Is very sweet! She has big brown eyes that really make it hard to resist her every whim. Her sisters spoil her rotten, but somehow she hasn't turned out rotten. She loves being outside and would go with a perfect stranger as long as they were headed out the door. She too is a Daddy's girl. She is the best behaved in the saddle. Mom has never had it so easy as we did on the cattle drive for 10 days (someone cooking, cleaning, and the horses to babysit). This early fall Emma gave us quite a scare. My sister Heather and I were bottling in the kitchen when we heard a bang. Emma had fallen off the couch onto her head. Angelique (niece) picked her up and held her until I got in there and took Emma. I kept waiting for the "big cry" after the silence. It never came. Emma wasn't breathing. I took her into the kitchen where Heather and I tried to get some response from her and couldn't. We rushed her into the office to find Dustin. Heather called for someone to call 911 – the whole time I was thinking, "it will be too late by the time they get here!" Dustin tried turning on the phone but it wouldn't work. It was then he just stopped and said, "I need to give her a blessing." He placed his hands on her head and as soon as he stated the authority of the priesthood Emma took her first shallow breath. I have never prayed so hard in my life! I testify he is there and he hears and cares about us; that our friends, is the reason for the season! Christ was born and he lives today. The new star showed the way to Bethlehem. Christmas is my favorite time of year!
